Protein Balls

There are hundreds of recipes, I’ve tried all kinds of flavors but for my family the basic peanut (or almond butter) based ball is always the favorite. I use a base recipe and then add ingredients to change things up.

The Basic Recipe:

1 cup rolled oats (I like Bob’s Red Mill Organic Oats)

1/4 cup protein powder, ground flax or chia seeds (or some combination)

1/2 cup peanut butter (I like Trader Joes No Stir natural in either crunchy or smooth. Justin’s Peanut Butter is great too, it tends to be thicker so you might need more liquid. Cashew butter is another great option as it tends to be creamier than other nut butters.)

1/3 cup maple syrup, or honey (if I need more liquid I’ll add water or olive oil)

1 teaspoon vanilla, optional

Pinch of salt

Add Ins –

1/2 cup chocolate chips, m&m’s, peanuts…

Dried, chopped fruit like strawberries or raspberries and a tsp of almond extract

Dried, chopped apples and a tsp of apple pie spice

1/4 cup cocoa powder, dried cherries and dark chocolate chips

INSTRUCTIONS

Combine the oats with the dry ingredients.

Add the nut butter, maple syrup or honey, vanilla, and pinch of salt. Stir to combine thoroughly.

You can either scoop as is or add in extra ingredients.

I like to use a #40 cookie scoop (which is about 4 teaspoons). Makes around 20 balls. I flash freeze them and put them in small baggies with 2-3 so they we can grab them as we are running out the door.
